Tomato Basil Soup
This is a very easy to make, tasty tomato basil soup.
Ingredients
Serves 8-10.
- 2-3 onions
- 6 garlic cloves
- 4 oz carrots
- olive oil
- 14 oz diced tomatoes
- 14 oz tomato juice
- 28 oz of vegetable broth - note that you can use bouillon or soup base to make the broth
- 1-2 bunches of basil
- salt and pepper
Instructions
First, dice the onions, garlic, and carrots. If you have a food processor, you can use that to coarsely chop them. Sautee this mixture in olive oil until it becomes soft.
Next, add the tomato juice, diced tomatoes, and broth and turn up the heat until it comes to a simmer. You can shred the basil now, either by hand, or if you want to be fancy, you can slice it into strips. Add about 2/3 of the basil to the soup now, and let it all cook for about an hour.
Taste the soup and add salt and pepper to taste. Sometimes tomatoes can be a bit tart, and if you find the soup too sour, you can add a small amount of sugar to balance it.
When you serve it, sprinkle a few pieces of shredded basil on top. The bright green of the basil looks very nice against the red soup.
