Fried "Chicken"

Great for when you're craving something crispy and delicious, this fried "chicken" will keep anyone satisfied.

Serves 4

  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 cups unbleached white flour
  • 4 tablespoons nutritional yeast (optional)
  • 3 tablespoons yellow mustard
  • ½ cup water
  • 2 tablespoons baking powder
  • 1 lb. mock chicken (try Worthington Chic-Ketts or White Wave wheat meat)
  • 3½ cups vegetable oil

Mix together the salt, onion powder, pepper, garlic powder, flour, and nutritional yeast in a deep bowl. In a separate bowl, dilute the mustard with 1/2 cup water. Add 1/3 cup of the flour mixture to the mustard mixture and stir. Add the baking powder to the dry flour mixture and mix.

Dip chunks of the mock chicken into the mustard batter, then drop each chunk into the flour mixture and coat with the desired amount of "crust." Fry the chunks in hot oil on medium-high heat in a large skillet or deep fryer until crispy and golden brown, turning as needed.

Tofu substitute

You can also substitute tofu that has been frozen, thawed, and has the water pressed out. This results in a more "meaty" texture perfect for this recipe...Mmm

Hi. Do you press the water out of the tofu before you freeze it or after? I guess you would dry it out beforehand, right? Thanks.

tofu question

You have to thaw tofu before using it. I freeze it right in the container that it comes in from the store. It takes at least 24 hours for it to thaw in the refrigerator. It's easy to squeeze the water out of it after it thaws - freezing makes tofu less crumbly. It also gives it a different texture. I tried freezing it once and it tasted so good that now I hardly ever use it without freezing it first (unless I'm making scrambled tofu).

Try this recipe:
Thaw your frozen tofu. Squeeze the water out. Cut it into cubes.
Heat 3-4 tablespoons of oil in a cast-iron pan and fry it for a few minutes, until slightly brown. Turn the heat off and add the following:
1/2 teaspoon onion powder,
1/2 teaspoon garlic powder,
1/4 cup tamari soy sauce
2 tablespoons nutritional yeast.

Stir it all together until the tofu is coated. Serve with rice. Prepare to be amazed - it's shockingly good!

Do I have to use Worthington?

Posted by Anonymous User at Jun 27, 2009 10:44 AM
I want to make this for the fourth of July, but I'm not sure if I'll be able to find Worthington Chic-Ketts or White Wave wheat meat in my area. I have, however, seen the Morningstar Farms Meal Starters Chik'n strips. Could I use these instead? If not, could you tell me where I could find the two mentioned mock chiken products? Thank you.

I'd recommend using chicken flavored seitan. Buy or make your own. :)
