Tofu Salad No. 1

A delicious, yummy and creamy dish reminiscent of egg salad, but dairy and egg-free.

  • 1 pound extra firm tofu, mashed or crumbled
  • 1/3 cup chopped red bell pepper
  • ½ cup chopped yellow onion
  • 2 tablespoon chopped fresh parsley
  • 1 teaspoon basil
  • 1 teaspoon garlic powder
  • 1¼ cups vegan mayonnaise

Mix together the tofu, pepper, onion, parsley, basil, and garlic powder. Gently fold in the mayonnaise. Stir.

I'm not sure I heard it absorbs flavor easily. I gonna find out though.

it does, its strange, but when i have tofu i have it with no salt seasoning, cumen (did i spell that right?), and garlic! its really good! try it!

On its own, it's bland. But it does a great job of absorbing flavors such as sauces, marinades, and spices. Experiment with recipes that use tofu and you are almost guaranteed to discover some favorites.

Note: it is important to drain the tofu first, to get most of the water out, so that the finished product will have a rich taste, not a watered down taste.

I use the quick method of draining:

- Take tofu out of package
- Place napkin on plate, and tofu on napkin
- Place napkin on top of tofu (so you have one napkin under tofu and on on top)
- Place fairly weighty object, like a ceramic bowl, on top of napkin which is on top of tofu
- Press down
- Leave object there for another 5 minutes

For most recipes, I like firm or extra-firm tofu. Softer tofu often works well in creamy desserts.
