The Lowdown on Crepe & Spoon

What’s this we hear about vegan crepes coming to the Twin Cities? And more nondairy ice cream options too? And all in one spot? Tell us more!

Rachel Booth and Michael Beachy, the masterminds behind Crepe & Spoon, recently gave us the scoop on their new vegan-friendly ice cream and crepe shop, slated to open on November 20.

Rachel moved to Minneapolis from Oregon four years ago, and Michael Beachy hails from rural Minnesota. They became friends a few years ago. After many years of working in the food industry, both were craving something more.

“We wanted to create and have fun and have something be ours so that we can choose which direction our industry goes.”

Rachel had been dreaming of ice cream and Michael had been dreaming of crepes. As they talked about their respective dreams, they put two and two together and got the idea for a shop that could serve both interests.

“We knew that we wanted to create something that wasn’t offered yet and explore something we both love. Food is powerful and changes lives. We want to do that! Crepe & Spoon also allows us to be challenged with flavor combinations and to be fully creative.”

Over the years, Rachel and Michael have been honing their culinary crafts separately. Now coming together, Rachel takes the lead on ice cream, while Michael takes the lead on crepes. Formulating the menu for their cafe, they collaborated on creating and testing recipes until, after lots of trial and error, they had something they both enjoyed.

And what about the vegan options we’ve been hearing about?

“We knew immediately that everything would be vegetarian, and as we talked about it more it made sense to have a strong focus on nondairy products as well.”

Though not all of their ice cream options will be dairy-free, Rachel and Michael hope that those who come for the dairy will be tempted to explore the vegan options.

“Our hope is to always make someone’s day better with a product that is both conscientious and a decadent treat.”

Crepe & Spoon is located at 339 22nd Avenue NE in Northeast Minneapolis, where Rachel and Michael both live. Their grand opening is on Monday, November 20 at 5pm.
