New Dinkytown restaurant Avocadish is serving up a bowl of green goodness featuring the extraordinary avocado! Try their Sweet n’ Spicy Bowl’ which layers brown rice, spinach, roasted sweet potato, paprika chickpeas, black beans, red and green onion, sliced avocado filled with avocado hummus, almonds, paprika, AND their house vinaigrette. Bam!
Classic and delicious Namaste Cafe has a number of incredible vegan options for this year’s challenge, including their Chiya Chili Potato appetizer that comes with a little kick, a Raw Jackfruit and Bamboo Shoot Curry with mango-coconut coleslaw and basmati rice entree—both available for lunch and dinner—and their lunch special, a Roti Wrap filled with curried jackfruit, crunchy veggies, and coconut chutney. Wow!
PLNT BSD‘s Paradise Bowl will have you soaking up the summer vibes as you nourish yourself with banana, almond milk, strawberry, and blueberry base topped with strawberries, blackberries, blueberries, pineapple, gluten-free crunch, coconut, chia seeds, and edible glitter. Did we mention it comes in a festive frozen pineapple bowl?
Shish, A Mediterranean Grill & Cafe is joining the challenge with a featured classic, their fresh and filling falafel burger with avocado. You’ll want to dip fries into some of their hummus, babaganoush, and garlic sauce.
Red Wagon Pizza Company knows how to treat chickpeas. Their featured vegan classic, the Chique Pea Pizza, is a pie topped with hummus, spiced chickpeas, red onion, olive tapenade, harissa-marinated Roma tomatoes, and citrus-dressed arugula. Mmm!
Root To Rise Kitchen is serving up their decadent Jackfruit Wings with a side of sweet coconut sticky rice, mango pineapple salsa and spicy blanched broccolini, and green beans. You’ll want to follow them on social ASAP to see where they’ll pop up throughout August to get your hands on this dish!
Tiny Diner has created a Singapore Noodles with ‘dry’ curried rice noodles with snap peas, shishito peppers, radish, sprouts, scallions + option to add tofu. This one is perfect for your tastebuds AND the obligatory food pic.
