Food that touches the soul comes from cooking with love! with these ingredients everyone at your table this winter will feel the warm arms wrapped around them with every bite. Wild rice is an amazing grain and mixed with the sweet potatoes you have sweet and savory covered all in a 100% plant-based dish, of course. Join CAA’s Tamuno Imbu online as he cooks along side you providing some of his tips.
Class fee is $5 or FREE for students or those who are unemployed. The class will take place via Zoom and login instructions will be provided after registration.
If you’d like to cook along in real time during the class, you’ll need these ingredients:
Ingredients
- 2 tablespoons neutral vegetable oil, such as refined avocado or grapeseed
- 1 pound scrubbed sweet potatoes, cut into 1/2-inch cubes
- 1 pound apples, any variety, cut into 1/2-inch cubes or pieces
- 1 cup wild rice blend (substitute all wild rice, all brown rice, or half cup of each)
- 1 tablespoon olive oil
- 1 large white or yellow onion, chopped
- 3 large or 4 small stalks celery, chopped
- 1 shallot, chopped
- 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dry)
- 1 tablespoon fresh thyme (or 1 teaspoon dry)
- 3/4 cup vegetable broth
- 1/2 teaspoon salt, plus extra to season the roasted potatoes/apple
- Freshly ground black pepper to taste
- 1-2 tablespoons sherry vinegar, to taste
- 1/2 cup pomegranate arils
