Cook tasty plant-based dishes!

Join us for our Irish themed online cooking class this month.  CAA’s Tamuno Imbu will show you how to veganize an Irish comfort food favorite – Shepherd’s Pie.

This rich, protein packed dish features a flavor profile that sets off the hearty filling. It features flavorful herbs and a fluffy potato topping. To save time on preparing the filling you can use saved leftovers, or make it a day ahead.

In this 1 hour class, you’ll see that it is fairly simple to make and uses ingredients that are easy to find in your local grocery store. If you want to cook along be sure to have the ingredients listed below on hand.

Class registration is $5.00 or free for students and people who are unemployed. The class will take place via Zoom and login instructions will be provided after registration.

Ingredients

Topping

1.5 lbs Yukon gold potatoes
2 tablespoons vegan butter
2 cloves garlic, finely minced
4 oz vegan cream cheese
1/2 cup almond milk
salt & pepper

Filling

1 tablespoon your favorite cooking oil
3 cloves garlic, minced
1 cup yellow onion, diced
1 rib celery, finely chopped
1 (15 oz.) can of cooked brown lentils, drained and rinsed
8 oz baby Bella mushrooms, finely chopped
2 tablespoons fresh parsley
1 tablespoon fresh rosemary
1 tablespoon fresh thyme
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1/2 teaspoon salt
1/2 teaspoon pepper

2 tablespoons all-purpose flour
10 oz frozen veggie mix (peas, carrots green beans, corn)
3/4 cup vegetable broth
