Almond Fruit Smoothies

  • 5 sections Jackfruit, frozen/ fresh
  • 1/3 C Cranberries, frozen/ fresh
  • 1 Bunch of Spinach, rinsed
  • 2 Dates, pitted
  • 1 C Almond Mylk, more if you enjoy a thinner smoothie

Place Jackfruit in blender pitcher. Top with spinach, cranberries, dates and almond mylk. Blend until smooth. Add more mylk for desired consistency.

Chocolate Banana Milkshake

A simple but delicious recipe with a lot of variations possible, makes for a refreshing snack.

Serves 2

  • 2 cups Chocolate Soy Milk
  • 2 Bananas
  • 4-6 Ice Cubes
  • 2-3 drops of Vanilla extract (optional)

Blend all ingredients in a blender until smooth. Serve immediately.

Variations: You can use plain soymilk too, for a regular banana milkshake or try adding soy protein powder for an added nutritional kick.

Hot Cocoa

An easy, simple and comforting drink for those chilly nights.

Serves 1

  • 1 cup soy/rice milk
  • 2 tablespoons sugar
  • 2-3 teaspoons of cocoa powder
  • ¼ teaspoon vanilla extract

Warm up milk for 1½ minutes on high in microwave, or over stovetop (making sure to constantly stir). Mix the sugar and cocoa in a mug, and then slowly pour the warm milk into the cup, stirring constantly. Add vanilla into the drink, and enjoy.

Tropical Fruit Smoothie

A great vegan treat to take you to a tropical paradise in no time–this yummy drink only takes a few minutes to make!

Serves 2

  • 2 Kiwis, peeled
  • 3 Oranges, peeled
  • 1 Banana, peeled
  • 6-8 ice cubes

Blend all ingredients in a blender until smooth. Serve immediately.

Variations: Substitute different fruits, like pineapples, strawberries, or grapes.

Egg-Free Egg Nog

The festivities of winter holidays just don't seem complete without sipping on thick, creamy egg nog. Try this simple yet delicious recipe for egg-free nog … and happy holidays!

Serves 5

  • 1 quart soymilk
  • 6 ounces Mori-Nu silken tofu, extra firm
  • 6 tablespoons maple syrup
  • ¼ cup Amaretto, Southern Comfort, brandy, or alcohol of choice (optional)
  • 2 teaspoons vanilla extract
  • 1½ teaspoons cinnamon
  • ½ teaspoon cardamom
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves

In a blender, combine all of the ingredients and blend until creamy and smooth. Chill before serving.
