Ginger Carrots

Ingredients

  • 1 lb baby carrots
  • 10 medium slices of unpeeled fresh ginger
  • 5 oz. orange juice
  • salt and pepper

Instructions

  1. Combine all ingredients in a pot and bring to a low boil. Simmer until carrots become barely tender.
  2. Transfer to a baking pan and heat in the oven until the liquid concentrates.

This recipe makes approximately 5-6 servings.
