Raw Pumpkin Soup

  • measuring cup
  • sharp knife
  • blender

Ingredients:

  • 2 cups pumpkin (canned is okay)
  • 2/12 cups water
  • 1 chopped yellow onion
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 cup soaked almonds
  •  1 Tbsp cumin
  • 1/2 tsp coriander
  • 2 cloves garlic
  • 1 cup apple or pear juice
  • 1/2 tsp dry mustard
  • 1/2 cup olive oil + a little salt

Blend all ingredients until creamy consistency is achieved. Garnish with cinnamon and pumpkin seeds.
